Pour boiling hot water into pot, two inches
high (cold water can be used; however,

(Hold knob with left hand - thumb
screw with right hand) ... Snap thumb
screw ove·r stop. Tighten thumb screw
firmly. If leak occurs after pressure is
up-tighten further .. . Open valve by
raising lifter vertical (straight up and
down). The high fire witl create steam,
forcing air out of cooker. (This is important
- high temperature cannot be
attained with air in cooker.) It takes
seven minutes on AR25, ten minutes on.
AR1525, to expel air.
Close valve and pre.ssure will rise
When gauge reads 1 O· lbs. for vegetables
or 15 lbs. for meats (see recipes or charts
in canning manual ) , turn down fire.
Now adjust the valve by unscrewing cap
(see illustration ) until a slight leaking
sound is heard .. . Adjust fire to keep
this sound constant.
After processing period has been completed
with glass jars, turn off fire, and
allow pressure to condense to zero. Do
not force "this return to zero with glass
jars or lgss of liquid in jars will result.
When using tin c;ans, open valve by raising
lifter to vertical position (straight up
and down) allowing pressure to blow out.
When gauge reads zero, remove band

you. This will keep vapor away from you.
When using jars, allow vapor to disappear
before removing jars because they
may break if removed from this vapor
into relatively cool room. When using
tin cans, they may be removed from
cooker immediately a·nd plunged into
cold running water. If more food is to
be processed, keep cooker hot to conserve
time-if finished for the day-emptyand
dry. Do not store cooker with cover
in place; ·however, if this is necessary,
crumple newspapers inside to absorb
moisture.

CAUTION: When there is pressure in
cooker, do not allow meat, or other
foods, to "blanket" bottom. Lack of
circulation af liquid on cooker bottom
will cause it to overheat and this may
cause it to bulge. This does not
weaken the cooker.
SPECIAL FEATURES OF THE BURPEE
ARISTOCRAT COOKER
Both the body and cover of this cooker are made
from heavy plate aluminum, each part being
formed, without seams, from one piece of metol.
Even the most severe blow will not crack the body
or cover. Because of this method of construction,
the cooker is not only safer but also easier to
clean. In addition, this construction insures a
poreless cooker which meons no "canner smell"characteristic
of cast aluminum.
GASKET
The gasket under the rim of the cooker cover
makes the joint steam-tight. If necessary, it can
be replaced quickly and easily.
PRESSURE GAUGE
This gauge is a dial-type, bourdon tube, geared
movement instrument. To insure its accuracy, we
suggest that it be tested at the beginning of each
canning season. Many dealers, teachers, and
County Agricultural Agents' offices will be equipped
with a Burpee Gauge Tester.
CLAMPING BAND
If, for any reason, too high a pressure develops,
the clamping wings on th is band-lock will gradually
release any excess pressure.
CONTROL VALVE
The control valve is a combination safety valve
and steam vent. When the cap is screwed down
as tightly as possible, steam will begin to escape
at 20 or 22 pounds pressure.
To regulate and control pressure, unscrew the cop
until enough steam escapes to keep pressure gauge
indicator at the desired pressure. When using valve
to regulate pressure, olwoys be sure to hove enough
water in the cooker so that it will not run dry.
If, when using the closed valve method, a leak
occurs in the control valve, but the required pressure
can still be maintained, the cooker is operating
satisfactorily. If the leak is excessive, however,
be sure that there is plenty of water in the
cooker.
To release steam gradually, unscrew cop until a
small amount of steam escapes.
To release steam pressure instantly, raise lever
to vertical or upright position.
Even though escaping steam prevents clogging of
valve, this valve should be washed every time
cooker is used.
Remove cap by unscrewing it, wipe cone-shaped
stem with soap cloth and rinse and dry. Clean
inside the seat-part left on cooker-when cap
is off.
ALWAYS open control valve before attempting to
remove cover from cooker even though pressure
gauge indicator registers zero.
When not using the cooker, leave control valve
lever in horizontal, or flat, position.
COOrKING IN THE COOKER
Your Burpee Aristocrat Cooker may or may not
come equipped with circular inset pans and crossbars
for cooking meals. Any pans or glass ovenware,
however, which will fit into the cooker may
· be used.
Cooking in the cooker requires less water than
during canning because many of the foods will
cook in their own juices. It is satisfactory to fry,
roast, or sear directly in the bottom of the cooker
although some people prefer to use a frying pan
and then place the food in the cooker.
CARE OF COOKER
Use any kind of kitchen cleanser or steel wool to
clean.
Always put water in cooker before placing it over
the fire .
When cleaning the cover, do not put pressure
gauge in water.
Do not allow steam to blow off any more than
necessary because the cooker will boil dry. If
cooker should boil dry, slowly pour HOT water
into it. Never put cold water in a hot cooker and
never set hot cooker in cold water.
After using, clean and thoroughly dry the cooker.
Always keep it in a dry place. To allow for proper
ventilation when not in use, do not clamp cover
to body. Either set cover and body (upside
down) on corrugated board, or put a large piece
of crumpled wrapping paper or newspaper in the
cooker.
Oil the band-lock screw frequently. Keep threads
on control valve cap clean. Leave control valve
lever in horizontal position when not in use.

defects in material and workmanship. When properly
