Seal!on with salt and pepper. Theri put in a layer of thin sliced raw potatoes and onion chopped fine. Dot with butter. Alternate layers until dish is full. Cover with enough milk to moisten. Bake 131; hours in a hot oven. SPICE CAKE Cream 1 cup sugar and 1 heaping tbsp. shortening. Add 1 tbsp. molasses, 1 egg, ~ cup cold coffee, 1 tsp. soda dissolved in ~ cup sour milk, 2· cups bread flour, Y2 tsp. each of cinnamon, clove and nutmeg. 11 BUTTER SCOTCH PIE 1 cup flour Ys tsp. SJllt Crust Pinch baking powder Ys cup lard Cold water Mix flour, salt and baking powder. Cut the lard in with a knife. Add water gradually until it can be handled. Line a pie plate and scallop the edge. Prick crust in bottom of plate with a fork to prevent blisters. Bake in hot oven until medium brown. Filling Yolks of 2 eggs Y2 cup water Y2 cup brown sugar 1 tbsp. butter 1 cup milk 1 tbsp. cornstarch 1 tbsp. flour mixed in cold water Mix together and cook in a double boiler, stirring until thick. Pour into the baked pie shell. Beat egg whites with a fork until stiff. Add 3 tbsp. granulated sugar. Pile on pie and brown in the oven . . If the egg is hard to beat stiff, add a pinch of salt. You may choose orchid, lotus green, buff and blue, orange and black or many other attractive colors. If you have an old iron bed, a few odd chairs and an old-fashioned bureau, combine them into a harmonious and colorful set to beautify one of the bedrooms. Dye your old ruffled curtains yellow or peach or nile green to brighten up your rooms. Melt together 2 squares of chocolate and 2 tbsp. butter and add to above mixture. Stir well with a spoon. Finish beating with egg beater. CARROT AND APPLE SALAD 1 c. grated raw carrots ~ c. diced apples ~c. celery ~ c. chopped nuts Mix with dressing and serve on lettuce. ESCALLOPED HAMBURG Put a layer of hamburg steak in a baking dish. Seal!on with salt and pepper. Theri put in a layer of thin sliced raw potatoes and onion chopped fine. Dot with butter. Alternate layers until dish is full. Cover with enough milk to moisten. Bake 131; hours in a hot oven. SPICE CAKE Cream 1 cup sugar and 1 heaping tbsp. shortening. Add 1 tbsp. molasses, 1 egg, ~ cup cold coffee, 1 tsp. soda dissolved in ~ cup sour milk, 2· cups bread flour, Y2 tsp. each of cinnamon, clove and nutmeg. 11 BUTTER SCOTCH PIE 1 cup flour Ys tsp. SJllt Crust Pinch baking powder Ys cup lard Cold water Mix flour, salt and baking powder. Cut the lard in with a knife. Add water gradually until it can be handled. Line a pie plate and scallop the edge. Prick crust in bottom of plate with a fork to prevent blisters. Bake in hot oven until medium brown. Filling Yolks of 2 eggs Y2 cup water Y2 cup brown sugar 1 tbsp. butter 1 cup milk 1 tbsp. cornstarch 1 tbsp. flour mixed in cold water Mix together and cook in a double boiler, stirring until thick. Pour into the baked pie shell. Beat egg whites with a fork until stiff. Add 3 tbsp. granulated sugar. Pile on pie and brown in the oven . . If the egg is hard to beat stiff, add a pinch of salt.
