A NOTE OF THANKS
I would like to take this
opportunity to say "THANK
YOU " to Becky Carrick and
Kim Odell from the
Accounting Department, for
the true team effort they
exhibited during the recent
finalization of the 1991
Cost Report due December
31.
Becky and Kim put in
alot of hours these past few
weeks, often working until
well after midnight.
You are both truly an
asset to our division and
our hospital.
Also, a special thank
you to the internal audit
staff, Betty Rivers and
Celeste Williams, for their
assistance and to Carolyn

FROM ARA FOOD
SERVICES
In the past few months,
nutrition has been a hot
topic in the news. We have
found out that food labels
don't always tell us what's
inside and that the basic
food groups are in disarray.
Because it's such a hot
topic, something as
pleasurable as a hot meal
can raise a lot of questions:
Is any food good for you?
How do you know what's in
a package? Just who is
winning the food game?
It all started about ten
years ago when people
finally started listening to
doctors and registered
dietitians, who said that
excessive amounts of fat,
cholesterol and calories
January 3, 1992
were the leading causes of
heart disease and cancer.
The American diet, experts
agreed, was a major
contributor.
THE FOOD INDUSTRY
RESPONDS
Marketing tests and
focus groups told the food
industry that people wanted
to eat healthier foods.
Words like "lite", "fat-free",
"no-cholesterol", and "fresh"
became part of our
shopping vocabulary.
In some cases the
products are healthier, but
not always. Many of the
products were unchanged,
only repackaged to
highlight a "natural" or
"cholesterol-free" ingredient
while still delivering an
excessive amount of fat.
People who thought they
were improving their diets
were still eating the same
foods in harmful amounts.
At this point the
consumer interested in
dieting was losing.
