INTRODUCTION This book has been prepared by the Dietetic Department of The Battle Creek Food Company to meet the demand for more specific information concerning the adaptation of our Foods to Special Diets. Recognized authorities who have contributed so much to our present day knowledge of diet have been freely consulted. In no instance where suggestions for the diet in specific ills are made have we failed to follow the best medical opinion obtainable. In recommending Battle Creek Foods for general use it is not with the thought that they should make up the entire bill of fare to the exclusion of other foods. On the contrary they are to supplement other wholesome foods in common use. We acknowledge our indebtedness to the staff of the Battle Creek Sanitarium for many important food facts gathered from actual experience, also the friendly cooperation of food specialists and laboratory technicians of the Battle Creek College whose scientific research has been a constant guide in all our dietetic undertakings. Health depends largely on living the simple normal life. Fresh air, sunshine, exercise, sufficient rest, and perhaps most of all proper diet assures it for nearly everyone. It is no wonder diet plays so important a part in health. When you stop to consider this, what is more reasonable. Your body is the most wonderful of all laboratories. It takes many different foods and transforms them into muscle, bone, blood and energy; this is so cleverly done that even now all the details are not fully understood. Your part in this wonderful transformation is to see that your body has the right kind of food material with which to work. What Proper Food Will Do for You 1. It will raise your vitality. 2. Prevent deficiency diseases. 3. Produce a high state of physical development. 4. Insure nervous stability. 5. Create greater endurance. 6. Increase resistance to infections. 7. Give greater recuperative power. How to Eat to Be Healthy - Radiant Health is .largely a m~tter of proper foad selection, wh(;lther you market for a large family or simply choose your own food at a restaurant, learn to choose a balanced ration with the greatest appetite appeal and nourishing qualities. This becomes quite simple for all of the elements: protein, fat, carbohydrate, minerals and vitamins are furnished if you will daily consume an abundance of fruits, vegetables, whole grain cereals and dairy products. How to Eat to Build and CHAPTER II DIET IN CONSTIPATION What Is Constipation? It has been called "The pet ailment of erring millions." You may be interested to know there are two kinds, common constipation (also called atonic) and spastic constipation, which is usually accompanied by pain and much discomfort. We shall consider common constipation as this is most benefited by diet adjustment. · Common constipation has been described as elimination which is unsatisfactory in three ways: 1. There may be fewer movements than is customary. 2. The form of the stool may be such as to give pain in passing. 3. The passage may be accompanied by the very disagreeable odor of putrefaction and gas formation. The constipated person should always consult a physician for direction, especially when it is accompanied by pain or discomfort. What Harm Does Constipation Do? Statements like "Ninety per cent of all disease is due to constipation" may seem exaggerated to you, but they are based on leading physicians' experiences. When food waste remains too long in the colon it decays. Dr. John Harvey Kellogg, founder of the famous Battle Creek Sanitarium, says, "X-Ray examinations show that persons whose bowels move once a day are constantly carrying in their colons the putrefying residue of five to ten meals, or even a larger number." Surely the dangers of constipation must be rather commonly known for the taking of laxatives has almost become a national habit. This is to be regretted, for laxatives do not cure constipation. Their first effect is to relieve it; their final effect is to make the condition worse. Have You Constipation? Some physicians insist on three evacuations- daily, and practically all are agreed that there should at least be a thorough movement after breakfast or supper. One should, however, be sure that elimination is complete. Some people have a regular movement daily, and yet are constipated. The to Maintain Good Health s movement is simply the overflowing of a reservoir which never really completely empties. What is voided may be the residue of what was eaten several days before. A careful "Examination" by a competent physician will determine the exact condition of your colon. What to Do for Common Constipation Don't take laxatives. They do not cure constipation and they should be avoided unless for temporary relief as prescribed by your doctor. 1. Those who are not slaves to purgatives will often find it sufficient to simply increase the fiber content of the diet with such whole bran products as *Krusty Bran or *Fig-Bran. The average diet is deficient in this type of food. 2. Some especially serviceable "near foods" for use in more stubborn cases are the volume increasing products such as *Kaba, *Psylla, and *Agar. With one of these it is usually advisable to furnish drugless lubrication to soften the stool. *Paramels or *Paralax with Agar will do this. 3. When common constipation is accompanied by toxic symptoms (Intestinal toxemia) such as gas formation, coated tongue and bad breath, the diet program should include steps to destroy the bacteria in the colon which cause these toxic conditions. The most simple and pleasant way to accomplish this is by the use of *Lacto Dextrin which makes a pleasant drink with a lemon-like flavor. In very obstinate cases *Soy Acidophilus may be used with the *Lacto Dextrin for quicker results. 4. The general diet must be well balanced and simple, consisting chiefly of fruits, vegetables, whole grain cereals, nuts and dairy products. 5. Some individuals find tea, coffee, chocolate, eggs or milk especially constipating, avoid any such article known to be con-stipating to you. - 6. Be regular, have a definite habit time. Never neglect a "call" as a lost call is not easily recovered. 7. Try to eat your meals as near the same time each day as possible. 8. Drink water. It is a good plan to take it slowly, two glassfuls at a time. On arising, between meals and before retiring, are perhaps the best times. 9. Include plenty of vitamin B in your diet as supplied by bran foods or *Savita Yeast Tablets. *Battle Creek Products 6 How to Eat to Build and What Bran Will Do to Restore Satisfactory Elimination (The Bulk Suppliers) Research work has shown that there is a certain definite amount of fiber (bulk) needed by the normal person to keep free from constipation. This fiber could be supplied by large quantities of fruits, vegetables, and whole grains, but many find it inconvenient to eat a sufficient amount of these foods regularly, and these are the ones who gain the greatest benefit by simply increasing the quantity of fiber in the diet. The extra fiber or bulk should be supplied at each meal and to make it easy and pleasant to carry out this plan, The Battle Creek Food Company offers a wide choice of fiber rich foods. For example, at breakfast bulk can be supplied by *Krusty Bran or *Fig-Bran, or if preferred, these cereals may be made into dainty muffins. For luncheon *Bran Biscuits or ':'Laxa Biscuits would probably be most appropriate, at dinner bran bread or *Fig-Bran cookies will supply the extra bulk. The experience of many has shown that the best results are obtained by varying the kind of bulk used, so change about using bran cereals, muffins, and biscuit. In more obstinate cases or for those who eat out and dislike bran foods, the extra bulk may be pleasantly furnished by products like *Kaba, *Psylla or *Agar. Tests show *Kaba supplies more bulk than other common sources. This gives it a distinct advantage - usually no more than one teaspoonful at meals is sufficient. If you are in doubt concerning the use of extra fiber due, perhaps, to an unusually delicate digestive tract, you may find it advisable to use *Kaba or *Agar, which are the softest forms of bulk known, allowing them to jell in hot water before taking. Increasing the fat in the diet has proved helpful for restoring the normal consistency of the stool. This has been accomplished experimentally by the use of large amounts of olive oil and other edible fats. These may accomplish the purpose but often put on unwanted pounds, are hard to consume, and may overtax the digestive system. The same results are obtained and far more pleasantly and conveniently by the use of drugless mineral oils such as *Paralax with Agar or *Paramels. These oils are best taken before retiring and when used this way research work shows they are most effective and do not disturb digestion in the least. To Overcome Putrefaction Very often constipation due to dietary faults is accompanied by putrefaction which is shown by gas formation, coated tongue, bad breath, and foul smelling stools. In such cases the bacteria found in the colon has been shown microscopically to be of a putrefactive type. For years attempts were made to correct this condition by the use of various sour milk preparations, most of which were worthless. It was also shown, by means of the microscope, that these putrefactive bacteria could be eradicated by the use of Lactose and Dextrin, two natural food sugars. So we combined them in the product *Lacto Dextrin which is well tolerated and pleasant to use. In some unusual cases of putrefaction a combination of *Lacto Dextrin and *Soy Acidophilus Milk has been used for quicker results. The *Soy Acidophilus Milk is sent out directly from our laborator~.es and is a culture which will not be destroyed by digestion. These products are best used as prescribed by the physician. Does Your Diet Contain Sufficient Vitamin B? If not, the bowel will be lazy, and research work shows this to be due to a lack of vitamin B. Vitamin B is supplied in the richest amount and most conveniently by the use of *Savita Yeast Tablets, which are made from dry brewers' yeast. They never ferment or cause digestive disturbances like moist yeast is apt to do. Our foods low in starch and the unsweetened fruits and vegetables make meal planning easier for the restricted. You must not let this condition weigh you down with discouragement. Your one handicap, having to consider your food intake, actually gives you a distinct advantage, due to your diet containing an abundance of allowable fruits, vegetables and dairy products, it is high in minerals and vitamins usually giving remarkable freedom from colds and dental decay. There is probably no use to remind you to form the good habit of following your diet precisely, never cheating. You will, of course, have a definite diet chart arranged for you only, by your physician, showing just the type of food to include in your meals and the amount to use for perfect safety. There is no need to frighten you into reducing, the desire for better looks is sufficient to make you long for a perfect weight and figure. It is true, however, that the overweight person is a poor risk as far as life expectancy goes, so it is quite right for you to take steps to regain your normal weight and figure. Plan a Reducing Program The first "DO" is a "DON'T." Don't take reducing compounds of any kind! They are so dangerous that some have suffered serious results from using them. Before you take definite steps, check your weight with the fol-lowing standard tables. If you appear to be overweight consult your physician for his approval of a reducing diet for you. Phy-sicians are agreed that the most valuable and safe method of reducing is by use of the diet low in calories. For net weight, subtract 4 per cent. Figure on following the diet until your weight is normal, and it is best to face your problem squarely. How many pounds overweight are you, lets say twenty just for example. This being true you should plan to follow your diet six to eight weeks, as you can rely on a reduction of two to three pounds weekly. So many fail because they do not plan definitely to follow a diet long enough to obtain results. Be determined that you will be one of the successful reducers, there are a great many who are successful. Curb the Calories This means use less of the concentrated and rich foods, which are the foods high in calories. Especially avoid cake, candy, jelly, mayonnaise, pastry, fried foods, ice cream, whipped cream, ripe olives and olive oil. A void overeating and taking food between meals, chew gum if you become hungry. Thorough mastication and slow eating help to prevent overeating at any meal. Don't skip meals, you would become so hungry that you would simply overeat at the next and stretch your stomach. General Suggestions Use salt sparingly. Do not drink more than a glassful of water with meals, but drink all you want between meals. Three full meals at regular hours. Eat generously of cereals such as *"ZO," *Zwieback, also of butter, cream, mayonnaise, ripe olives, potatoes and the other foods, called for in our weightgaining menus. 2. Six to eight glassfuls of water daily. 3. Ten to twelve hours sleep each night with bedroom win-dows open. 4. A short rest period before or after each meal. 5. Mild exercise in the fresh air and sunshine. 6. Regular toilet habits - avoid constipation. (High Caloric) Do you know your weight is like a bank account? The more food you put in, the more weight you have. This is virtually true barring disease and hereditary tendencies. If you desire to gain in weight, to increase your resistance to infections such as colds, or to improve your looks, visit your physician and follow his directions carefully. Doubtless, he will say eat more highly nourishing and strengthening foods which are the foods high in calories. Some are underweight due to a lack of a vital element in the diet and often gain surprisingly when it is furnished. Stimulating the Appetite Vitamin B has been shown by research work to have an appet ite stimulating effect. When it was supplied in a rich amount, children and adults alike gained weight almost without except ion. (See page 26) for vitamin B chart. You will find *Savita Yeast Tablets most convenient as a means of supplying vitamin B regularly, three of them are equal to a cake of bakers' yeast in this vital element. Some other vitamin B rich products are *Savita Soup Cubes, *Savita stock form and the *Bran Products. *Battle Creek Products 14 How to Eat to Build and To Supply Iron If the blood is lacking in iron the underweight person is greatly benefited by supplying this element in rich amounts. Have the blood examined and if you need iron-rich foods they are easily obtained. *Food Ferrin is so rich in this element that a tablespoonful is equal to a pound of spinach. *Savita and the bran products are also rich sources of iron which is needed for bright red blood. In the Winter Some form of cod liver oil will often do wonders for the underweight person, especially when used during the dark winter months. It should be taken as prescribed by the physician. How Do You Eat? Let's consider breakfast first. Do you eat breakfast and at what time? Perhaps you are underweight because you miss this important meal. It could easily be so, because the extra five hundred calories or more which the average breakfast supplies will soon amount to pounds for you. Now about the time for breakfast! An early breakfast is the best rule, because it allows more time before lunch to create a hearty appetite. There should be four to five hours between meals. A breakfast of cereal, toast, egg, nourishing beverage and fruit supplies all the essential elements, and can be taken by almost everyone. If you have been missing breakfast, gradually work up to this amount. You will be glad to hear that a dry cereal such as *"ZO" has twice as many calories as a cooked cereal, so there is no need to rise early to cook porridge. You may alternate *"ZO," *Cooked Whole Wheat and *Rice Flakes, add a little *Krusty Bran or *Fig Bran if you are one of those individuals requiring_ extra bulk to keep free from constipation. -There are other Battle Creek Foods just as valuable for weight gaining. Your dealer will gladly give you a copy or you may write direct to The Battle Creek Food Company. • Battle Cr_eek Products to MaitJtaitJ Good H.,.llb CHAPTER VI DIET IN COLITIS Colitis is a serious condition of the colon very often brought about by using harsh purgatives. It usually follows spastic constipation, and it is believed that practically every case of chronic constipation is accompanied by colitis. There are several generally recognized types, and a physician should always be consulted and his directions followed carefully. Physicians are find'ing the use of *Lacto Dextrin and the culture, *Soy Acidophilus milk, very successful in the treatment of colitis. These articles used a1one or tog~ther tend to overcome the toxic conditions: gas formation, coated tongue, bad breath and foul smelling stools, and thus help to restore the normal condition of the colon. *Description on page 44. Very often the physician suggests using a non-residue diet or a soft diet temporarily due to the extreme irritability of the colon. (See our suggestions foT a well balanced soft diet on page 29.) If the colitis is of the mucous type and accompanied by constipation the general directions for correcting constipation on pages 4-8 may be followed with best results. In addition general medical treatment should not be neglected. The diet perhaps most commonly prescribed is termed the Pemberton or low carbohydrate diet. By simply cutting down on concentrated carbohydrates such as cakes, cookies, pies, cereals and potatoes, many gain relief from excruciating pain. Another very successful diet introduced by Dr. Fletcher of Toronto, consists of increasing the vitamins in the diet, especially vitamin B. (See pages 25, 26). Fortunately the condition may often be entirely relieved by diet treatment. Because hyperacidity is usually a symptom of some condition requiring medical attention, you should consult your physician for diagnosis. Frequently an analysis of the stomach contents or X-ray will forestall serious trouble. The Diet All foods that tend to stimulate the flow of acid such as spices, condiments, rough foods or very hot or cold foods, are prohibited. Liquids except milk preparations are given sparingly. Fats check the secretion of acid and are, therefore, included in the menu in generous amounts, sweet butter and heavy cream are especially suitable. ·Food is taken at short intervals as this tends to give relief from the burning sensation. The basis of the diet consists of cere~Js, bread, milk and vegetable purees. Constipation a Common Complication of Hyperacidity When hyperacidity is accompanied by constipation, special steps must be taken to correct it and the toxic symptoms it often causes such as coated tongue, gas formation and bad breath. Establishing the right kind of bacteria in the colon is of first importance, as it is the kind of bacteria which either cause or prevent these toxic symptoms. *Lacto Dextrin will help you to have the right kind of bacteria. And any mother can do a great deal to help or hinder • her baby's health, depending upon how much she knows or does not know about the needs of the baby. A baby is a miracle in miniature. It can become almo£t any- • thing in the course of "growing up." Is it tomorrow's Edison or Lincoln? Tomorrow's physical ideal - or tomorrow's sickling? Any mother knows how sturdy, healthy, happy and contented she wants her baby to be. She wants that baby to grow into a bright, healthy, vigorous childhood, and then - looking far into the future - she dreams for the adult future of that little "tike," plans of such an inspiring nature that she hesitates to confide them to anyone. And, whatever the years bring to her and to her baby, baby's diet will be more largely responsible than any other one factor. The importance of breast feeding cannot be overstressed, for the best substitute can never completely take the place of mother's milk. Infant feeding presents many difficulties, including sensitivity to cow's milk; hence, the importance of the physician's advice and care. Whether or not the child is breast fed, orange juice, canned tomato juice or pineapple juice diluted with an equal amount of boiled water should be given daily in one half teaspoonful quantities to supply vitamin C - commencing at one or two months of age. Vitamins A and Dare furnished by cod liver oil as prescribed by the physician. When constipation is present during infancy, great care should be taken that it does not become habitual. Natural means, such as diluted prune juice, or in stubborn cases, drug free min- • eral oil such as *Paralax with Agar may be safely used. Cow's milk is lacking in carbohydrate content, as compared with mother's milk, so the addition of a healthful sugar, such as I *Meltose or ':'B-Lac, is made to the artificial feeding. Normally the needed iron comes from food but it must be supplied regularly. Recent studies show a small amount of copper is also required to help the body absorb the iron. Many adults and children are anemic just because there is not a sufficient amount of iron-rich foods in the diet. This kind of anemia is called simple nutritional or secondary. ';;'' The High Fat Diet (Commonly Called Ketogenic) There are several conditions for which physicians have used the high fat diet successfully. It is most commonly used for Epilepsy, Migraine Headache and some cases of Hay Fever. . The diet high in fat is necessarily low in carbohydrate and . the Battle Creek Foods described in Chapter 3 on diabetes are . m'osf suitable. Some of the foods which will be most enjoyed are the fruits and vegetables canned without sugar, the Gluten breads, Bran products and Savita soup cubes. These foods used with the customary generous amounts of cream, butter and mayonnaise make a more nearly normal and acceptable diet. The Liquid Diet Often Called a Post Operative Diet Occasionally necessity demands liquid food for a few days and in some rare cases for ·a prolonged period. The Gruels Gruels may be made of thoroughly cooked *Vita Wheat thinned with milk or cream and seasoned with a little butter if desired. In other cases dextrinized foods are also allowed. The Dextrinized Foods A dextrinized food is one which is slowly toasted, the object is to partially digest the starch. This makes the food more easily and quickly digestible. The following Battle Creek foods are dextrinized: *Rice Biscuit, *Rice Flakes, *Vita Wheat, *"ZO," *"ZO" Flakes, *Zwieback and *Lacto Dextrin. To Avoid Constipation The soft diet may result in constipation due to lack of bulk. This is prevented by using *Lacto Dextrin which may be added to milk or fruit juice or by using a little drugless mineral oil such as *Paralax with Agar or *Paramels. Recognized authorities who have contributed so much to our present day knowledge of diet have been freely consulted. In no instance where suggestions for the diet in specific ills are made have we failed to follow the best medical opinion obtainable. Health depends largely on living the simple normal life. Fresh air, sunshine, exercise, sufficient rest, and perhaps most of all proper diet assures it for nearly everyone. It is no wonder diet plays so important a part in health. When you stop to consider this, what is more reasonable. Your body is the most wonderful of all laboratories. It takes many different foods and transforms them into muscle, bone, blood and energy; this is so cleverly done that even now all the details are not fully understood. Your part in this wonderful transformation is to see that your body has the right kind of food material with which to work. What Proper Food Will Do for You 1. It will raise your vitality. 2. Prevent deficiency diseases. 3. Produce a high state of physical development. 4. Insure nervous stability. 5. Create greater endurance. 6. Increase resistance to infections. 7. Give greater recuperative power. How to Eat to Be Healthy - Radiant Health is .largely a m~tter of proper foad selection, wh(;lther you market for a large family or simply choose your own food at a restaurant, learn to choose a balanced ration with the greatest appetite appeal and nourishing qualities. This becomes quite simple for all of the elements: protein, fat, carbohydrate, minerals and vitamins are furnished if you will daily consume an abundance of fruits, vegetables, whole grain cereals and dairy products. Ask your Battle Creek Dealer for Food Charts and recipe booklets which will help you select a balanced, satisfying and wholesome ration. How to Eat to Build and CHAPTER II DIET IN CONSTIPATION What Is Constipation? It has been called "The pet ailment of erring millions." You may be interested to know there are two kinds, common constipation (also called atonic) and spastic constipation, which is usually accompanied by pain and much discomfort. We shall consider common constipation as this is most benefited by diet adjustment. · Common constipation has been described as elimination which is unsatisfactory in three ways: 1. There may be fewer movements than is customary. 2. The form of the stool may be such as to give pain in passing. 3. The passage may be accompanied by the very disagreeable odor of putrefaction and gas formation. The constipated person should always consult a physician for direction, especially when it is accompanied by pain or discomfort. What Harm Does Constipation Do? Statements like "Ninety per cent of all disease is due to constipation" may seem exaggerated to you, but they are based on leading physicians' experiences. When food waste remains too long in the colon it decays. Dr. John Harvey Kellogg, founder of the famous Battle Creek Sanitarium, says, "X-Ray examinations show that persons whose bowels move once a day are constantly carrying in their colons the putrefying residue of five to ten meals, or even a larger number." Surely the dangers of constipation must be rather commonly known for the taking of laxatives has almost become a national habit. This is to be regretted, for laxatives do not cure constipation. Their first effect is to relieve it; their final effect is to make the condition worse. Have You Constipation? Some physicians insist on three evacuations- daily, and practically all are agreed that there should at least be a thorough movement after breakfast or supper. One should, however, be sure that elimination is complete. Some people have a regular movement daily, and yet are constipated. The to Maintain Good Health s movement is simply the overflowing of a reservoir which never really completely empties. What is voided may be the residue of what was eaten several days before. A careful "Examination" by a competent physician will determine the exact condition of your colon. What to Do for Common Constipation Don't take laxatives. They do not cure constipation and they should be avoided unless for temporary relief as prescribed by your doctor. 1. Those who are not slaves to purgatives will often find it sufficient to simply increase the fiber content of the diet with such whole bran products as *Krusty Bran or *Fig-Bran. The average diet is deficient in this type of food. 2. Some especially serviceable "near foods" for use in more stubborn cases are the volume increasing products such as *Kaba, *Psylla, and *Agar. With one of these it is usually advisable to furnish drugless lubrication to soften the stool. *Paramels or *Paralax with Agar will do this. 3. When common constipation is accompanied by toxic symptoms (Intestinal toxemia) such as gas formation, coated tongue and bad breath, the diet program should include steps to destroy the bacteria in the colon which cause these toxic conditions. The most simple and pleasant way to accomplish this is by the use of *Lacto Dextrin which makes a pleasant drink with a lemon-like flavor. In very obstinate cases *Soy Acidophilus may be used with the *Lacto Dextrin for quicker results. 4. The general diet must be well balanced and simple, consisting chiefly of fruits, vegetables, whole grain cereals, nuts and dairy products. 5. Some individuals find tea, coffee, chocolate, eggs or milk especially constipating, avoid any such article known to be con-stipating to you. - 6. Be regular, have a definite habit time. Never neglect a "call" as a lost call is not easily recovered. 7. Try to eat your meals as near the same time each day as possible. 8. Drink water. It is a good plan to take it slowly, two glassfuls at a time. On arising, between meals and before retiring, are perhaps the best times. 9. Include plenty of vitamin B in your diet as supplied by bran foods or *Savita Yeast Tablets. *Battle Creek Products 6 How to Eat to Build and What Bran Will Do to Restore Satisfactory Elimination (The Bulk Suppliers) Research work has shown that there is a certain definite amount of fiber (bulk) needed by the normal person to keep free from constipation. This fiber could be supplied by large quantities of fruits, vegetables, and whole grains, but many find it inconvenient to eat a sufficient amount of these foods regularly, and these are the ones who gain the greatest benefit by simply increasing the quantity of fiber in the diet. The extra fiber or bulk should be supplied at each meal and to make it easy and pleasant to carry out this plan, The Battle Creek Food Company offers a wide choice of fiber rich foods. For example, at breakfast bulk can be supplied by *Krusty Bran or *Fig-Bran, or if preferred, these cereals may be made into dainty muffins. For luncheon *Bran Biscuits or ':'Laxa Biscuits would probably be most appropriate, at dinner bran bread or *Fig-Bran cookies will supply the extra bulk. The experience of many has shown that the best results are obtained by varying the kind of bulk used, so change about using bran cereals, muffins, and biscuit. In more obstinate cases or for those who eat out and dislike bran foods, the extra bulk may be pleasantly furnished by products like *Kaba, *Psylla or *Agar. Tests show *Kaba supplies more bulk than other common sources. This gives it a distinct advantage - usually no more than one teaspoonful at meals is sufficient. If you are in doubt concerning the use of extra fiber due, perhaps, to an unusually delicate digestive tract, you may find it advisable to use *Kaba or *Agar, which are the softest forms of bulk known, allowing them to jell in hot water before taking. Increasing the fat in the diet has proved helpful for restoring the normal consistency of the stool. This has been accomplished experimentally by the use of large amounts of olive oil and other edible fats. These may accomplish the purpose but often put on unwanted pounds, are hard to consume, and may overtax the digestive system. The same results are obtained and far more pleasantly and conveniently by the use of drugless mineral oils such as *Paralax with Agar or *Paramels. These oils are best taken before retiring and when used this way research work shows they are most effective and do not disturb digestion in the least. To Overcome Putrefaction Very often constipation due to dietary faults is accompanied by putrefaction which is shown by gas formation, coated tongue, bad breath, and foul smelling stools. In such cases the bacteria found in the colon has been shown microscopically to be of a putrefactive type. For years attempts were made to correct this condition by the use of various sour milk preparations, most of which were worthless. It was also shown, by means of the microscope, that these putrefactive bacteria could be eradicated by the use of Lactose and Dextrin, two natural food sugars. So we combined them in the product *Lacto Dextrin which is well tolerated and pleasant to use. In some unusual cases of putrefaction a combination of *Lacto Dextrin and *Soy Acidophilus Milk has been used for quicker results. The *Soy Acidophilus Milk is sent out directly from our laborator~.es and is a culture which will not be destroyed by digestion. These products are best used as prescribed by the physician. Does Your Diet Contain Sufficient Vitamin B? If not, the bowel will be lazy, and research work shows this to be due to a lack of vitamin B. Vitamin B is supplied in the richest amount and most conveniently by the use of *Savita Yeast Tablets, which are made from dry brewers' yeast. They never ferment or cause digestive disturbances like moist yeast is apt to do. Our foods low in starch and the unsweetened fruits and vegetables make meal planning easier for the restricted. You must not let this condition weigh you down with discouragement. Your one handicap, having to consider your food intake, actually gives you a distinct advantage, due to your diet containing an abundance of allowable fruits, vegetables and dairy products, it is high in minerals and vitamins usually giving remarkable freedom from colds and dental decay. There is probably no use to remind you to form the good habit of following your diet precisely, never cheating. You will, of course, have a definite diet chart arranged for you only, by your physician, showing just the type of food to include in your meals and the amount to use for perfect safety. There is no need to frighten you into reducing, the desire for better looks is sufficient to make you long for a perfect weight and figure. It is true, however, that the overweight person is a poor risk as far as life expectancy goes, so it is quite right for you to take steps to regain your normal weight and figure. Plan a Reducing Program The first "DO" is a "DON'T." Don't take reducing compounds of any kind! They are so dangerous that some have suffered serious results from using them. Before you take definite steps, check your weight with the fol-lowing standard tables. If you appear to be overweight consult your physician for his approval of a reducing diet for you. Phy-sicians are agreed that the most valuable and safe method of reducing is by use of the diet low in calories. For net weight, subtract 4 per cent. Figure on following the diet until your weight is normal, and it is best to face your problem squarely. How many pounds overweight are you, lets say twenty just for example. This being true you should plan to follow your diet six to eight weeks, as you can rely on a reduction of two to three pounds weekly. So many fail because they do not plan definitely to follow a diet long enough to obtain results. Be determined that you will be one of the successful reducers, there are a great many who are successful. Curb the Calories This means use less of the concentrated and rich foods, which are the foods high in calories. Especially avoid cake, candy, jelly, mayonnaise, pastry, fried foods, ice cream, whipped cream, ripe olives and olive oil. A void overeating and taking food between meals, chew gum if you become hungry. Thorough mastication and slow eating help to prevent overeating at any meal. Don't skip meals, you would become so hungry that you would simply overeat at the next and stretch your stomach. General Suggestions Use salt sparingly. Do not drink more than a glassful of water with meals, but drink all you want between meals. Three full meals at regular hours. Eat generously of cereals such as *"ZO," *Zwieback, also of butter, cream, mayonnaise, ripe olives, potatoes and the other foods, called for in our weightgaining menus. 2. Six to eight glassfuls of water daily. 3. Ten to twelve hours sleep each night with bedroom win-dows open. 4. A short rest period before or after each meal. 5. Mild exercise in the fresh air and sunshine. 6. Regular toilet habits - avoid constipation. (High Caloric) Do you know your weight is like a bank account? The more food you put in, the more weight you have. This is virtually true barring disease and hereditary tendencies. If you desire to gain in weight, to increase your resistance to infections such as colds, or to improve your looks, visit your physician and follow his directions carefully. Doubtless, he will say eat more highly nourishing and strengthening foods which are the foods high in calories. Some are underweight due to a lack of a vital element in the diet and often gain surprisingly when it is furnished. Stimulating the Appetite Vitamin B has been shown by research work to have an appet ite stimulating effect. When it was supplied in a rich amount, children and adults alike gained weight almost without except ion. (See page 26) for vitamin B chart. You will find *Savita Yeast Tablets most convenient as a means of supplying vitamin B regularly, three of them are equal to a cake of bakers' yeast in this vital element. Have the blood examined and if you need iron-rich foods they are easily obtained. *Food Ferrin is so rich in this element that a tablespoonful is equal to a pound of spinach. *Savita and the bran products are also rich sources of iron which is needed for bright red blood. In the Winter Some form of cod liver oil will often do wonders for the underweight person, especially when used during the dark winter months. It should be taken as prescribed by the physician. How Do You Eat? Let's consider breakfast first. Do you eat breakfast and at what time? Perhaps you are underweight because you miss this important meal. It could easily be so, because the extra five hundred calories or more which the average breakfast supplies will soon amount to pounds for you. Now about the time for breakfast! An early breakfast is the best rule, because it allows more time before lunch to create a hearty appetite. There should be four to five hours between meals. A breakfast of cereal, toast, egg, nourishing beverage and fruit supplies all the essential elements, and can be taken by almost everyone. If you have been missing breakfast, gradually work up to this amount. You will be glad to hear that a dry cereal such as *"ZO" has twice as many calories as a cooked cereal, so there is no need to rise early to cook porridge. You may alternate *"ZO," *Cooked Whole Wheat and *Rice Flakes, add a little *Krusty Bran or *Fig Bran if you are one of those individuals requiring_ extra bulk to keep free from constipation. -There are other Battle Creek Foods just as valuable for weight gaining. It usually follows spastic constipation, and it is believed that practically every case of chronic constipation is accompanied by colitis. There are several generally recognized types, and a physician should always be consulted and his directions followed carefully. Physicians are find'ing the use of *Lacto Dextrin and the culture, *Soy Acidophilus milk, very successful in the treatment of colitis. These articles used a1one or tog~ther tend to overcome the toxic conditions: gas formation, coated tongue, bad breath and foul smelling stools, and thus help to restore the normal condition of the colon. *Description on page 44. Very often the physician suggests using a non-residue diet or a soft diet temporarily due to the extreme irritability of the colon. (See our suggestions foT a well balanced soft diet on page 29.) If the colitis is of the mucous type and accompanied by constipation the general directions for correcting constipation on pages 4-8 may be followed with best results. Lacto Dextrin for Colitis and Constipation Whether it is colitis or common constipation, research work has shown milk sugar compounds, such as *Lacto Dextrin, most effective for overcoming intestinal toxemia which causes gas formation, coated tongue and bad breath. How Lacto Dextrin Came to Be Used For centuries queer sounding sour milks such as koumiss, yogurt and bulgaricus, have been used by Arabs and other people with remarkable freedom from colon conditions such as colitis and constipation. The old French savants used a certain kind of buttermilk enema in the treatment of colitis very successfully. When modern investigators saw the unusual vigor and advanced age of the people using these sour milks, the secret of their value was sought and discovered. And it isn't the alcohol often present in koumiss, or the rancid taste of some bulgaricus milk that makes them helpful. Their value lies in the unique milk sugar (Lactose) which they contain. "You must reduce" (If overweight) . 2. "Keep your diet laxative." 3. "Use alkalinizing foods and fresh fruit juices." 4. "No meat, fish, fowl or eggs." 5. "Avoid stimulating beverages and condiments." You are probably at a loss to know what you may eat and stay strong and feel satisfied. The overweight, high blood pressure person is most benefited by diet regulation, very often the blood pressure is lowered one to two points for each pound lost. (Hunter). tEased on normal instead of average blood pressure. to Mai>Jtain Good Health CHAPTER VIII The Value of Diet in the Treatment of Arthritis, Rheumatism and Neuritis JJ Most physicians agree that diet does play its part in the cause and treatment of arthritis and related conditions. In addition general medical treatment should not be neglected. The diet perhaps most commonly prescribed is termed the Pemberton or low carbohydrate diet. By simply cutting down on concentrated carbohydrates such as cakes, cookies, pies, cereals and potatoes, many gain relief from excruciating pain. The Battle Creek Foods described under Diabetes on page 9 are most suitable for carrying out this type of diet. Another very successful diet introduced by Dr. Fletcher of Toronto, consists of increasing the vitamins in the diet, especially vitamin B. (See pages 25, 26). This diet is made simple by the use of the exceedingly rich source of vitamin B such as *Savita Yeast Tablets, one of which equals a cake of bakers' yeast in this valuable vitamin. Fortunately the condition may often be entirely relieved by diet treatment. Because hyperacidity is usually a symptom of some condition requiring medical attention, you should consult your physician for diagnosis. Frequently an analysis of the stomach contents or X-ray will forestall serious trouble. The Diet All foods that tend to stimulate the flow of acid such as spices, condiments, rough foods or very hot or cold foods, are prohibited. Liquids except milk preparations are given sparingly. Fats check the secretion of acid and are, therefore, included in the menu in generous amounts, sweet butter and heavy cream are especially suitable. ·Food is taken at short intervals as this tends to give relief from the burning sensation. The basis of the diet consists of cere~Js, bread, milk and vegetable purees. Constipation a Common Complication of Hyperacidity When hyperacidity is accompanied by constipation, special steps must be taken to correct it and the toxic symptoms it often causes such as coated tongue, gas formation and bad breath. Establishing the right kind of bacteria in the colon is of first importance, as it is the kind of bacteria which either cause or prevent these toxic symptoms. *Lacto Dextrin will help you to have the right kind of bacteria. It is used as a pleasant tasting beverage. The person having hyperacidity finds it best to take it in milk at meal time. ,The soft.nature of the diet, lacking as it is in fiber, makes it important to include some special non-fibrous bulk to increase the volume of. the evacuations. *Agar or *Kaba softened in hot water may be used for' this ·purpose. ';;'' The High Fat Diet (Commonly Called Ketogenic) There are several conditions for which physicians have used the high fat diet successfully. It is most commonly used for Epilepsy, Migraine Headache and some cases of Hay Fever. . The diet high in fat is necessarily low in carbohydrate and . the Battle Creek Foods described in Chapter 3 on diabetes are . m'osf suitable. Some of the foods which will be most enjoyed are the fruits and vegetables canned without sugar, the Gluten breads, Bran products and Savita soup cubes. These foods used with the customary generous amounts of cream, butter and mayonnaise make a more nearly normal and acceptable diet. The Liquid Diet Often Called a Post Operative Diet Occasionally necessity demands liquid food for a few days and in some rare cases for ·a prolonged period. In either case, satisfying foods rich in minerals and vitamins are desired. If the purpose of the diet is to give the stomach a rest, then the gruels, fruit juices and other beverages are used. If, on the other hand, high nutritive value is desired, milk or milk and cream mixtures form the basis of the diet. To increase the nourishing properties, *Malted Nuts, *Food Ferrin, *Spinach Concentrate, *Vegetable Concentrate and Savita are excellent. The following classes of foods are generally allowed on the liquid diet: Milk (in any form) Cream Broths Milk Soup (strained) Gruels (strained) Malted Nut Beverages Fruit Juices * Battle Creek Products Kaffir Tea Minute Brew Savita Bouillon B-Lac for sweetening beverages Vegetable Gelatin Desserts Custards and Ices " Maintain Good Health The Soft Diet Often Called Smooth, Non-Residue or Semi-Liquid 29 This diet includes all of the foods described in the liquid diet and in addition gruels, milk, toast or milk toast are allowed. 1 Some physicians also include vegetable and fully ripe fruit 'I purees which means that the food is put through a fine sieve. I When these are permitted the *Battle Creek Canned Vegetables, *Spinach and Vegetable Concentrates may be used. The Gruels Gruels may be made of thoroughly cooked *Vita Wheat thinned with milk or cream and seasoned with a little butter if desired. Other popular gruels are made by moistening one of the ready cooked cereals with milk, putting it through a sieve; for this purpose you may use: *Fig Bran Flakes, *Lima Bean-Rice Flakes, *Rice Biscuit, *Rice Flakes, *"ZO", *"ZO" Flakes and *Zwieback. In other cases dextrinized foods are also allowed. The Dextrinized Foods A dextrinized food is one which is slowly toasted, the object is to partially digest the starch. This makes the food more easily and quickly digestible. The following Battle Creek foods are dextrinized: *Rice Biscuit, *Rice Flakes, *Vita Wheat, *"ZO," *"ZO" Flakes, *Zwieback and *Lacto Dextrin. To Avoid Constipation The soft diet may result in constipation due to lack of bulk. This is prevented by using *Lacto Dextrin which may be added to milk or fruit juice or by using a little drugless mineral oil such as *Paralax with Agar or *Paramels. The Diet Low in Protein (Meatless and Fishless) Usually the low protein diet means one restricted in heavy animal protein foods such as meat, fish and fowl. When these foods are restricted by the physician suitable substitutes are needed and Battle Creek has pioneered in supplying them. *Battle Creek Products. JO How to Eat to Build and For the Meat Flavor The tempting flavor of meat would be missed were it not for Savita which gives a meat-like flavor to soups, bouillons, gravies, sandwich spreads, macaroni, rice and noodle dishes. *Savita in soup cube form is generally used for the soups and bouillons, although the paste or "stock" form may be used. For gravy and general cooking the stock form is best. Savita is being used in the best clubs, hotels and hospitals during Lent and in many cases regularly for its exceptional flavor. The Vegetable Meats Protose or Nuttose *Protose is a dark colored vegetable meat and *Nuttose a light colored vegetable meat, both supply just as much protein as meat and with all the muscle building and strengthening qualities. They may be prepared in an endless number of ways, and when served with a *Savita Sauce they satisfy. The Salt Free Diet Dr. Kellogg states that "Among civilized people the excessive use of salt is almost universal," and that, "The idea that salt is a harmless substance is a grave error.
